About

Tsujita began in Tokyo in 2003; the Sawtelle Boulevard shop opened in 2011 as the company’s first American branch. The kitchen is known for a long-simmered tonkotsu broth and for tsukemen, the dipping-noodle format that still defines many lunch lines on the block. An Annex location across the street later absorbed overflow demand.
