Jinsol Gukbap opened in late 2015 in a Koreatown strip mall as a Busan specialist built around dwaeji gukbap, the pork rice soup that defines many of that port city’s working lunchrooms. The house simmered broth arrives lightly seasoned so you finish it yourself with saeujeot (fermented shrimp), sesame, salt, and banchan; rice and thin flour noodles go in when you are ready. Eater covered the room within weeks of opening; LA Weekly, Food GPS, Time Out, and The Infatuation (8.8) still treat it as Koreatown’s reference pork-soup stop.
