Owner Viet Tran opened Viet Noodle Bar on Glendale Boulevard in Atwater Village in March 2007 (the room expanded in 2008), after the tiny Viet Soy Cafe in Silver Lake. The bare-bones space with low wood tables and a wall of free books still runs as a neighborhood noodle bar rather than a banquet hall. The Infatuation’s must-order is turmeric fish noodles: springy vermicelli with cilantro, green onion, fish sauce, crispy shallots, and flaky turmeric-scented fish that shows up on most tables. Time Out praises a cleaner ginger fish pho as a break from heavy beef broths; chicken, beef, and vegan pho, house-recipe baguette banh mi, spring rolls, and vegetable-forward plates round out the board.
