Lunch Lady opened July 1, 2020, on Commercial Drive in partnership with Nguyễn Thị Thanh, the Ho Chi Minh City soup vendor Anthony Bourdain nicknamed “Lunch Lady” on No Reservations. The Vancouver kitchen, developed with chef Benedict Lim and refined with Thanh, translates Saigon street soups and snacks with Pacific Northwest ingredients.
