Bugra Arkin opened Dolan’s Uyghur Cuisine on West Valley Boulevard in January 2019, in a former crab-house storefront, to cook the Silk Road food of Uyghur communities from China’s Xinjiang region. The kitchen is halal and leans Central Asian more than coastal Chinese: cumin lamb, hand-pulled laghman, steamed manta (pumpkin or beef), and da pan ji (big plate chicken) with potatoes, peppers, leeks, and wide flat noodles under the stew. Bill Addison’s Los Angeles Times review made the big plate a citywide reference; The Infatuation still points to goshnaan (naan stuffed with beef and lamb) and the same chicken platter; Time Out favors the lamb polo with yogurt and cabbage-apple slaw. Staff shirts reading “Google Uyghurs” and counter materials invite diners to learn more about Uyghur culture and repression in Xinjiang.
