Soy Sauce: A Pantry Shelf Primer

Light, dark, tamari, and premium — how to read labels and buy for how you actually cook.

Most home cooks need two soy sauces, not ten. A light or usukuchi for seasoning during cooking, and a dark or premium bottle for finishing and dipping. The rest is context — cuisine, sodium level, and whether you want sweetness built in.

Starter shelf

  • One Japanese light soy or usukuchi
  • One Chinese dark soy for color and depth
  • Optional: tamari for gluten-free cooking
  • Optional: premium finishing soy for raw applications
