Miso: White, Red, and Awase

What the color tells you, how long it ferments, and which tub to reach for.

Miso color maps roughly to fermentation length and salt concentration. White miso (shiro) is mild and sweet — good for soups and dressings. Red miso (aka) is assertive — better for braises and bold marinades. Awase blends both.
